Ingredients

2 slices shallot
1 tbsp. smooth mustard
20 Mandarin orange wedges
1/4 cup Mandarin orange juice
1/4 cup orange juice
Sugar, to taste
1/2 cup extra virgin olive oil
Spring mix lettuce
Two 2-inch-long slices mango
Meat from 2 lobster claws
6 thick slices avocado
Methods/steps

Preparation:

1)-For dressing, mix first eight ingredients; set aside.
2)-Put greens on plate, then layer half the mango, half the lobster meat and half the avocado; repeat layers.
3)-Drizzle dressing over all.

Ingredients

1 lb. of bulk beef sausage, cut into small pieces
1 egg
1/2 cup of saltine cracker crumbs
2 tbsp. of milk
1/2 tsp. of rubbed sage
1/2 cup of water
1/4 cup of ketchup
2 tbsp. of brown sugar
1 tbsp. o fsoy sauce
1 tbsp. of vinegar

Methods/steps

In a bowl, mix the sausages, egg, crumbs, milk and sage; stir well. Shape into 1-in. balls. In a skillet over medium heat, brown meatballs; drain. Combine remaining ingredients; mix well. Add to skillet; bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until centers of meatballs are no longer pink.

* 2 qt. peanut oil

* 3 cups all-purpose flour, sifted

* 1 tbsp. baking powder

* 1 cup warm water

Methods/steps
Combine flour, baking powder in large mixing bowl, add warm water in small amounts and knead dough until soft but not sticky. Cover bowl and let stand for about 15 minutes. Pull of large egg-sized balls of dough and roll out into rounds about 1/4 inch thick. Punch hole in center of each round, piercing several times with fork to allow dough to puff; in heavy skillet fry rounds in peanut oil until bubbles appear on dough. Turn over and fry on the other side until golden brown. Top with your favorite toppings.

Ingredients

Cookies
1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 egg
1 tsp. orange extract
1 1/2 cups all-purpose flour
1/2 tsp. baking soda
1 tsp. ground ginger
1 cup dried cranberries
3/4 cup white chocolate chips
Icing
4 oz. cream cheese, softened
2 cups powdered sugar
2 tsp. orange extract
1/2 tsp. vanilla extract


Methods/steps

Preheat oven to 375 degrees. Combine sugar and butter until smooth. Add egg and orange and beat until smooth. Separately combine: flour, baking soda, and ginger. Mix into sugar mixture in small portions. Mix in cranberries and white chocolate chips. Drop spoonful of batter onto baking sheet. Bake for 8 to 10 minutes. Let cookies cool for at least 5 minutes. Icing: Combine cream cheese, powdered sugar, vanilla and orange extract with a electrical mixer. Transfer to a pastry bag or Ziploc bag. Cut tip of bag with scissor by 1/2 millimeter. Pipe lattice pattern onto cookies. Ready in 30 min 6 servings 24 cookies........
